Ingredients
2 cups of diced extra-lean ham
4 cups of diced raw potatoes
1 cup of chopped onions
3/4 cup shredded reduced fat cheddar cheese
1 -10 3/4oz can of Healthy Request Cream of Celery Soup (or cream of chicken)
1/8 teaspoon black pepper
1 teaspoon dried parsley flakes
1 teaspoon yellow mustard

Spray your crockpot with butter flavored cooking spray.

Mix up ham, potatoes and onions.

Sprinkle cheese evenly over the top.

In a small bowl, combine soup, pepper, parsley and mustard.

Add the soup mix to potato mixture.

Mix it up real good.

Cover and cook on low for 8 hours.

Mix it up before serving.

This recipe makes six 1-cup 3 point servings.

Cuban Pork Crock Pot Stew Recipe – 6 Points

I'm not on the program, but this is one of the Weight Watchers crockpot recipes that I am going to make for myself!

Ingredients
- 1 lb lean pork loin, cut into 1-inch pieces
- 1 lb sweet potatoes, peeled and cut into 1/2-inch pieces
- 1 large green pepper, chopped
- 1 red pepper, chopped
- 14 1/2 oz canned diced tomatoes
- 1 small can green chilies
- 2 medium garlic cloves, minced
- 1 small red onion, chopped
- 1/4 cup orange juice
- 3 medium green onions
- 1 tsp table salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 2 tbsp fresh lime juice
- 2 tbsp fresh chopped cilantro
- 1 tbsp fresh chopped parsley

Put these items in your slow cooker: pork, potatoes, chilies, tomatoes, peppers, garlic, orange juice, green onions, yellow onion salt, pepper

Cover and cook on low setting for 6-8 hours

Stir in parsley, lime juice and cilantro

Cover slow cooker and cook for 10 minutes more

A serving is 2 cups
Each serving is just 6 points

Santa Fe Chicken

Ingredients
- 24 oz (1 1/2) lbs chicken breast
- 14.4 oz can diced tomatoes with mild green chilies
- 15 oz can black beans
- 8 oz frozen corn
- 1/4 cup chopped fresh cilantro
- 14.4 oz can fat free chicken broth
- 3 scallions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp cayenne pepper (to taste)
- salt to taste

Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot.

Season chicken breast with salt and lay on top.

Cook on low for 10 hours or on high for 6 hours.

Half hour before serving, remove chicken and shred.

Return chicken to slow cooker and stir in.

Adjust salt and seasoning.

That's it! You can serve over rice, but that will be extra points.
